What is Kimchi?

Kimchi is a traditional fermented food and a type of seasoned dish in Korea. Vegetables, typically cabbage, are salted and fermented to enhance their shelf life, then seasoned to give them flavor. It's considered the most iconic Korean dish, known for its spicy and savory taste. Kimchi has a long history as a staple in Korean cuisine, and even single-person households in Korea today typically have kimchi on hand.

In South Korea, kimchi varies by region in terms of preparation methods and ingredients used. The recipe for Koreakimchi is based on Seoul-style kimchi, known for its balanced taste that's neither overly salty nor bland, but rather has a clean flavor profile. Representative types of kimchi include cabbage kimchi, bossam kimchi and Radish kimchi.

“Kimchi in Korea isn't just a type of food; it's ingrained as part of the culture and lifestyle..”

How long does kimchi last?

The shelf life of kimchi depends on various factors such as its ingredients, fermentation process, storage conditions, and personal preference for taste. Generally, when properly fermented and stored in the refrigerator at an appropriate temperature (typically between 0 to 4 degrees Celsius or 32 to 39 degrees Fahrenheit)

Kimchi has no expiration date

Especially when it's homemade, kimchi is often consumed well beyond a year, and it's common for individuals to let it ferment for several years according to their preference. Kimchi begins fermenting right after it's made, so its taste continues to evolve over time. Therefore, indicating no expiration date reflects the fact that consumers can enjoy it at its best flavor according to their preference.

Consuming kimchi after its expiration date typically doesn't pose health risks. However, for experiencing the most universally accepted flavor of kimchi without much preference bias, it's ideal to consume it within a month.

How to Store Kimchi Properly

One of the common questions from our customers is: "How do I store kimchi to keep it longer?"
The fermentation process not only gives kimchi its distinctive taste but also helps preserve it. Properly fermented and stored kimchi can last for 6 months or even 3 years.
However, several factors affect its longevity:

- Temperature: Kimchi ferments faster at higher temperatures. For optimal preservation, it should be stored in the refrigerator.
- Kimchi Ingredients: The type and freshness of vegetables and seasonings can impact the shelf life.
- Hygiene: Using clean utensils and containers can prevent contamination.

- Secret Tip: Make sure there is enough kimchi juice, which is the most significant factor in keeping kimchi fresh longer.
