Why Is It Called “Kimchi”?

Ever wondered where the word “kimchi” comes from? Before it was called “kimchi,” Koreans called it “dimchae.” It means fermented veggies, and the word is over 1,000 years old!

The word “kimchi” has gone through many changes over time. A long time ago, kimchi was called “dimchae”, which came from the Korean pronunciation of the old word “chimchae” (沈菜) — meaning “vegetables soaked in brine.” This term doesn’t exist in Chinese and was specially created in Korea to describe fermented vegetables.

Over time, the pronunciation changed

dimchae → jimchae → jimchi → kimchi

It is believed that the word may have been used as early as the Silla Dynasty.
Since Hangul (the Korean alphabet) had not yet been created, Chinese characters were used to write the word for kimchi.
